Milk & Cheese

Milk at Bruton Dairy.

We source our milk from Bruton Dairy and we love it, especially the organic milk from the Godminster farm (single farm milk is almost unheard of these days!) – it tastes awesome. The milk is treated as delicately as it can be and left unhomogonised (so the cream rises to the top like it always used to). After milking, there is a half a mile journey from farm to dairy. After being gently pasteurized and bottled by hand, the milk is delivered to us fresh each day. So many reasons that it tastes amazing.

Trethowan Dairy Cheese.

The Trethowan dairy is based on the farm in Hewish (a pipeline leads straight from the milking parlour into the cheese room!). Trethowan’s Gorwydd (pronounced Gor-with) Caerphilly is a mature Caerphilly made to a traditional recipe using raw cow’s milk and a traditional rennet.  Despite being considered a Welsh cheese, there is a long history of Caerphilly being made in the West Country, and their recipe originated in Somerset at the beginning of the 20th century.

Hurdlebrook Yogurt.

Dave Paull knew he had to do things differently to survive and thrive as milk prices dropped a couple of decades ago. Dave’s a third generation dairy farmer, Somerset born and bred. He produces creamy yogurts on the farm with a little help from his 200 strong herd of Guernsey Cows.
